Zess-flies were a type of fly. When the Death Star superweapon's Docking Bay 327 was locked down in 1 BBY, it caused a swarm of multicolored indicators representing traffic control for hangars 250 to 350 to crawl like zess-flies on a screen that Commander Pamel Poul was watching in the Death Star's Station Control West.
