Arthurians were a sentient species. A group of Arthurian delegates were meant to negotiate with Senator Padmé Amidala of the Galactic Republic at some point during the Clone Wars. As noted by the Jedi Padawan Ahsoka Tano, Arthurians never used eating utensils.
